Hello Robert,
When you are setting up your users and their Virtual Directory permissions, you can change their home folder if you go into 'User Manager' > Select a user > 'Virtual Directories'. Inside of the options for your user, you will see a new path that you can set. It may be a good idea at the start, to enable simple directory mode.
Using simple directory mode, you'll only be able to assign a single directory for the user it is enabled on. Instead of that directory being viewed by Cerberus of a sub directory, the selected virtual directory will be where that user is placed into when they authenticate and access your server. So if you have c:\ftproot set as the virtual directory, any users with simple directory mode will start at that folder when they log in.
There's more information about virtual directories here: The Virtual Directory System
